elk steaks!

This was my first time ever putting in for an elk tag and got drawn for a cow rifle hunt in Unit 7E (north of Flagstaff, AZ). I helped my dad pull his out on opening morning, and got mine on the 2nd morning.

It wasn't a vehicle-based hunt since we were up in a wilderness area. Very few hunters & lots of hiking!! I'm dead tired after dragging two elk almost a mile each (downhill, thankfully). But the freezer full of meat sure will be worth it! :chowtime:

I forgot to take my camera out with me, but was able to snap a few shots with my phone. Very beautiful setting at the base of the San Francisco peaks in some amazing aspen groves.

Whenever you're up here! I'm sure we'll have elk in the freezer for quite a while. I might have to plan a winter wheeling / cookout event...

I just helped my uncle quarter & pack his out this morning. Of course he also got one in some rugged terrain about a mile from any roads. Three for three on filling the tags; not bad. I need to pick up an old external frame backpack. That sure beats dragging it out by a rope.

Elk Steak in Beer

Awesome. I'm hoping to go next season if possible.

Anyways, enjoy this recipe:

2 pounds round steak
clove garlic (or to taste)
flour
1/4 cup olive oil
salt
pepper
1 teaspoon rosemary
1 onion sliced
1 8 oz can tomato sauce
1 bottle Sam Adams Lager (room temp)

Cut steaks into 4 oz pieces and dredge in flour. Heat oil in skillet and brown steaks on both sides. Season steaks with salt and pepper and place in deep pan. Saute onion, garlic, and rosemary in skillet and pour over steaks. Add tomato sauce and beer. Simmer with lid on for 1 1/2 hours. Serve over wide noodles.

That sounds delicious! I think I'll have to brew up a batch of homebrew just to try it out!!

Try boning it out instead. You'll save a ton of weight and trips. You can use an internal frame pack which you probably already have.

I have taken I believe 11 elk now and all but one have been boned or at least quartered out to carry (depending on distance). I've carried at least 5 by myself and as far as 5 miles into the back country where I bivouaced to hunt.:REOutArchery02: It is a difficult task, but boning makes it vastly easier. There are some good videos on how to if you don't know.

I haven't gotten to do much hunting so far. My 87 yr old dad died of pancreatic cancer, so I have been in TX most of the fall. I did get an early antelope in WY and some sharptails and blue grouse in CO. I was walking the folks little acreage this morning in East TX and jumped a little 4x4 whitetail. They are really tiny compared to our CO mulies and whitetails.

I have used both aluminum external frames and internal frame packs and there is a place for both. You need good bags to tie onto an external frame unless it is just quartered.

Hauling out elk

First of all, congrats on a sucessful hunt.
A couple of years ago my sweetie gave me a Cabelas deer cart for Christmas. It is the heavy duty model and I love it, just the thing for rolling a deer or quartered moose out of the bush. It is surprisingly capable in most terrain and way better than trying to drag or carry downed game out. Just my 2cents worth.
As a point of interest I had smoked elk roast last night and will barbecue some garlic/venison sausage from 1 of the 2 deer I got a couple of weeks ago on my annual deer hunt.
