Jerry Can Mount ?

Thank you for all your input. As suspected there seems to be nothing out there! The quest continues.....

Incorrect. As toyrover linked to, Columbia Overland has a solution for the D1 - and because the Discovery I had the same wheel lug bolt pattern as a NAS Defender wheel, the mount will mount to your tire carrier, and out through the center cap hole in your spare. The Disco I tire carrier pattern was 3 bolts with two up top and one on the bottom, while I believe the Disco II was two bolts on the bottom and one facing perfectly up. If Columbia is doing a variation in the way this mounts between the 2 Discoveries, they'll likely do one for your Defender as well. The only difference is that on a NAS ST, it will have to mount at a slight angle, because the NAS ST tire carrier was not manufactured with a lug to face perfectly up or down, but rather at an angle to the left. There would be no welding required for this solution. Again, call Columbia Overland and see if they'll do a one-off for you for the Defender - Hell, they may already do it.

Columbia overland carries a mount that goes right on the tire of a d1,

Problem solved.

Discovery I tire carrier pattern - note the pattern faces down:

NAS Defender ST tire carrier pattern - note the pattern faces angled to the left:

Columbia Overland used to make the mount for the D90 but since stopped. I emailed them about it and they said the Disco I carrier they make will work but you would need to drill into their mount. I forget where you would need to drill but it was too much effort for me to justify the purchase.
