Tonight's Dinner Will Consist Of........

As I type...





"SWR's"...Young Whole Fryer Chicken Soup....



At 6pm the night before....place whole young chicken fryer into crock pot and top it off with fresh water.



Slice one onion and place around the top of the chicken.



Top it off with all your favorite spices such as.....rosemary, thyme, oregano, sage....etc. I tried some Bay Leaves this time for more flavor.



Turn on high and let it cook overnight.



The next morning about 10am....



Take out the whole chicken and de~bone. Be careful to get all the bones! You can add a little more water after you take the bones out. Heat up the water in the microwave Before you pour more in, or you will crack your crock! Do Not pour cold water into a hot crock pot!



Place meat back into the crock pot.



Cut up carrots, celery and place in the crock. Add more spices to taste. Add some eggs noodles.



Let it cook for another couple of hours and you are ready by lunch time!

....or you can take some on the trail with you. I freeze it at times and it's fine.

Harris Ranch flatiron steak, cooked barely medium rare, brown rice with pine nuts, caesar salad with homemade croutons, and a fruit salad made from as much local fruit as possible. Soooo good!

Kalua Pig Tomorrow....baby!


I showed this earlier. But tonight I have pics of the "before" ....in the crock.



here goes....




I know you guys can do this! It's a Man Sport!


I was hungry for some of my Kalua Pig for the weekend...so here goes.



Pick up a 4 to 5 lb. Pork But*.

Place in your crock pot at 6pm the night before.

Take a steak knife and poke holes in da but*....!

Pour some liquid smoke all over the top.

Then sprinkle Hawaiian Rock Salt all over da top! (don't ask me what to do if you can't find that!)

The good news is ...It's ready for lunch by noon the next day.

The bad news is, you won't get any sleep All night because of the smells throughout the house and the anticipation this brings! Yum!

Now....


There is another way to eat this called .... "Kalua Pig and Cabbage".

Some people don't like the cabbage. Some do. Some cook the cabbage in with the Pig.

If you want to try it with cabbage...try just cooking up some cabbage on your stove seperately just before you eat.


Make sure you also make a huge pot of Sticky Rice to go with!

For some unknown reason.

I always seem to like to put something in the crock pot on Friday! I guess that way, it makes me prepared for the weekend. Good fun food, all weekend long. I can even take it with me if I decide to head to the desert.

So today.

I stopped by Von's because they currently have boneless beef chuck pot roast on sale for only $1.99 per pound! I always told the kids when they asked what's for dinner..."whatever is on sale kids"!!! That's how I shop!

So here is a pic..

That is a 3 pound beef chuck roast with Worcestershire sauce and onions... with Hawaiian rock salt and Spices!!

In the morning I will cut up Carrott's, Celery and Potatoes and put them in.

It will last me all weekend and then some!


Yummers! My whole house smells good already! ...

Tonight was a good one! Potato Soup and Venison Heart Sandwiches. Down home, PA goodness right there I tell ya!

12 Gallons of Chili

Actualy last night. I cooked up 12 gallons of different kinds of Chili for our anual Christmas Chili party. Beef and pork with and without beans, Turkey with and without beans, and a vegitarian chili. :chef:

This is a two day process with the beef and pork cooked on the BBQ first and then simmered on the stove for 36 hrs until the meat is falling apart. :cow:

Since we currently have Frost Warnings until 9am tomorrow!

I'm starting my world famous home made Chicken Soup....tonight!

Yummers! .....can't wait!

Stormy Night Comfort Food....

Today I started my special Winter Comfort Food.

Buy One Small Foster Farm Cleaned and Spiced Young Chicken. (Stater has them).

Put whole young chicken in Crock pot by 4pm the day before you want to eat it.

Pour some Olive Oil over the Chicken.

Fill 3/4 of the way with water, or at least to the top of the chicken.

Cut up one onion and place onion cuttings on top of and around the young chick! (I like young Chicks!)

Now ad more spices........rosemary, thyme, oregano, sage, garlic powder, ground pepper....and any other spice you like.

Cook on High..........overnight.

By 10AM the next morning......

de~bone the chicken.....very carefully because it will be falling apart!...YUM!

Now ad your Carrots, Celery, Potato's, and one more fresh onion. And a small amount of Egg Noodles (you can add more fresh noodles later, $1.00 a bag at Stater).

By 12 Noon.......you got it made....baby!

With your leftovers........

You can freeze to perfect portions to be able to re~heat while on da trailz!
It works great to add fresh noodles to your re~heated soup, so you don't have to deal with old soggy noodles from the original cook. So use noodles sparingly as you go along and it works out great! I feel the whole chicky bone thing really adds to the flavor of the whole thing!

It's Awesome!
