Water tank size & placement

Larger amounts of water in a blader like 50,75,100+ gallons should be centered and low in the vehicle. Putting it on one side to counter weight of other loads on the sides will give you an off balanced vehicle as you use the water.

I have about 20 -5 gallon bags for emergencies in the house. Amazon has a large assortment of bladders.

Wow, those bladders are a LOT smaller than I'd have expected for how much water they hold!
The moral of the story is that you might as well have a plastic tank for your expected use (they aren't heavy at all) but you can carry extra in a bladder if necessary.

I like the idea of the bladder! My current camper only has 20gal. I bought some 5gallon jugs, and I struggle on longer trips
A +1 for bladders. A great way to haul 'extra' for rare times you might need a much greater supply. I bought a bunch of 50 gallon military surplus Mylar bladders awhile ago, and they fold into abut a 12"x9"x2" package. At $5 a pop, also pretty much disposable if need be.

Heck, being Mylar they might be a good way to make your Expo rig a temporary moonshine runner when your 55 Dodge Coronet is in the Sheriff's impound

How long do the mylar ones last? Or are they single use?

Depending on where you travel, water security is a primary concern.
We carry 300L in our current vehicle and the new build will carry 400L. In both cases it is spread around in multiple, individually selectable chassis mounted tanks (keeping CofG as low as possible) and is used so as to never leave "all the eggs in one basket".
I would not put a bladder into the "high security" category.
Also, each tank has a vent that can be sealed with a tap that is accessible. Imagine having the vehicle fall over onto its side and then watching all of your water run out onto the ground.
I give similar security to fuel.
All tanks (both water and fuel) are rotomoulded polyethylene.
