I have towed trailers off road quite a bit. Its a hassle at times .....But a hassle well worth the effort compared to being stuck.

You should gain 4 - 5" by going spring under.
You can't just unbolt and flip them , you have to have perches welded to the top of the axles.
Axles have camber built into them , there is a top and bottom......
If you need more lift you will have to sub frame the trailer.

The problem as I see it is, approach and departure angles are destroyed with both front or rear carriers.

A bottle jack won't double as a winch / log splitter / frame straightener / bear avoidance tool ( weapon ) post puller / etc. Different tool for a different job.
