I doubt you lost much weight with what you removed. The bed and running gear are where most of the weight comes from. I have been staring at a 105 for over a year trying to decided if it is worth the effort to do anything with it. No way would those timbren spindles hold close to the weight...

May want to leave that rubber mat outside in the sun for a bit. The ones I have purchased from TS have a pretty strong smell for a while. Why such a thick mattress? Lower profile options are not bad comfort wise and would give you a lot more head room.

What is your tow vehicle? Are brakes requires in your state? IMO, the 101A2/A3 surge brakes are not practical because they are not the "free backing" and also result in a jerky ride. I would not mess with electric over hydraulic. Some people have been doing a hub and/or backing plate swap on...

You don't save much weight removing the brakes. For your tow vehicle, if the surge brakes are working, I would keep them. Spray some lube on the cables, pull hubs, repack bearings, clean brake components, adjust brakes, adjust brake levers, bleed fluid/refill if needed, make sure break away...
