    I've had good success with 3/4 inch Baltic birch plywood fastened together with Kreg system pocket screws.     Paul Jensen used this approach as a water tank in one of the Sprinters he converted. Held about 4 gallons, IIRC. This picture doesn't show the valve/spout added later to the bottom. I couldn't say whether you'd find this adaptable to roof use.
