I use an Adventure Medical Kits Comprehensive kit, with an added stethoscope, dental kit and IV start kit for Mexico travels (carry my own sterile IV stuff...). Good size that fits in a pannier, and has what I'm likely to need.

I guess I'm not a big fan of large wheels on my travel rigs...seems that less sidewall, more expensive rubber, and having to special order tires would be a hindrance if the truck spends any time in remote locations.
Now...I do own a vehicle that needs 19" wheels to fit the brake rotors...but...
That thing's rough. If you planned on parting it out, you'd likely get your money back, but it's gonna take at least a few grand to bring it up to spec.
Don't know what your budget is or what you're trading, but there are usually other options for cruisers in better shape than that for not...
