A battery monitor like the victron 712 would get you a lot better idea of your battery fullness than voltage alone.
You could run heavy charging leads back to the trailer. It would have to be at least 2awg, properly fused, and isolated from your truck batteries when your truck is not running.
It’s like you’re describing my experience towing a 10,000lb 12’ tall travel trailer with my gasser 3/4ton, except there were times I ran at 4000 rpm just to maintain the 55mph when I had a 25mph headwind.

As far as I’m aware the downstream o2 sensor(s) are there for the sole purpose of determining if the cats are operating and effective. If the cats not working if turns on the CEL for emissions reasons only.
I don’t think engine performance is affected by ineffective cats unless they’ve melted...
I'm not super happy with my viair. Going from 50 ish psi to 80 ish psi is basically impossible on all four tires with my $100 unit. It would take maybe two hours, I gave up after an hour. Guess I should have paid more.

I would use that or some other dc-dc charger before I’d use a converter and a 120v battery charger.
You could just wire the two batteries together but you’d get some voltage drop and the auxiliary battery would be chronically under charged and that would affect its life expectancy.
