I finished the wood work for my side table and sink, I still need to spend some time with a router and some polyurethane. After that the step is to hook up the water, modifying my drop slide so it will house a pull out table similar to the Tembo Tusk unit and then build the fridge divider/barrier.
Add one of these guys mounted up high so it lifts the cord as you push the fridge in and reels it out when the fridge is pulled out. Use it with a cable carrier or the cord alone.

My only hold up is the slow charging rate. The Anderson power poles on the front of the 1000 can take 240w of solar, 360w for the 1400. 240w is 20a at 12v, less at charging voltage. I wonder if I could hook a 20a AC/DC charger to the power poles. It would flow through the solar charge...

I've been thinking about this same idea, but planned on it coming out over the hood so when parked in populated areas people would be less likely to screw with it. I do like your idea of using it for an awning, but that wouldn't work for the 4runner.
