Can do a little about the ground clearance... here is a 45mm lift. Stock tires are about a 27" diameter. Could probably bump those up to 29". So nearly 3" of added ground clearance...
There are several manufacturers that offer the pull out kitchen. You often see them on bush camper rentals in Australia and Africa (i.e. Britz, KEA, etc). This particular model was called the Challenger. I don't know the manufacturers name...
But you can drill through the thicker pieces. Start with a small metal bit and work your way up in size. I would think drilling into the thicker sections to be ideal?

I have the ARB 63 and it has worked flawlessly. Had to recalibrate the temp though as it was off by 4 degrees or so. I never liked the orientation of the door (swings, the long way). Young kids could have a hard time using it as well.

The main reason I like the megamat is the 30" width and the high R-value. I didn't see an equivalent Sea to Summit pad and I'm guessing they won't ever offer anything wider.
x10 on the Megamat... but we pack 3 of them and space is an issue. We'll probably switch to 3 Exped Synmat 12's for packability. The difference in R-Value (9.5 vs 6) is of some concern.
