Insulation is all good...up to a point.
Take a look at 1" foam board with foil backing on both sides. The R value is quite high.
Using 2" foam does add insulation but there is so much glass and leaky door seals that I doubt that you're gaining very much in the long run.
2" will also remove...

After doing some research I found that the 2007 and newer E150's have a higher load capacity. Around 3k# if I remember right. That seems like plenty for my build.

I found that the payload capacity for 2007 E150 was increased depending on a few variables. Up to 2,800# in 2007 from 2,275 in 2006.
Is there a reason you chose an '06 not an '07?
