The coolant should not be hot enough to cause a failure in the water tank. The best solution though is to be able to bypass any part of the system, including HWT.
You Just described our truck! The high front wheel arches combined with the stainless apron work around the box make it look like the rear is low. I spent a lot of time measuring and checking before I figured out it is just an optical allusion!
Composite boxes have been around for decades. Built right they are incredibly strong. Our truck is 27 years old with over 400000 kms no issues. Super strong box.
Steel and Al transfer heat, composite is the best option for a 4 season box.

Any battery that is advertised as a "starter/deep cycle" is not a true quality deep cycle. It is marketing BS.
The difference between starters and deep cycle is the thickness of the plates, they can't be both thick and thin at the same time!
Our MB 917AF has a very flexy frame, and is about the same size as the C700. The box is a rigid mount, Mercedes approved. So the frame is held straight by the box. There is still quite a bit of movement between the cab and box. It would take a lot of engineering to design a one piece cab camper...
