On mine, I went with a Skidmark 4x4 1/4" hitch plate. Their newest version has more features than needed, but I'm sure it still works great.
Holds the weight of the vehicle with a jack and has guided my bumper free of several rocks and hills.
As far as I know, 01-06 were mechanically the same for the frame and body.
Some changes were made to the bodywork and styling. Limited got lighted steps.
Rear bumper shape might have changed, but the hitch mount should still work.

The low idle is almost always a vacuum leak on these vehicles. Check all of the rubber hoses and the diagram. My 01 had this problem when a shop put the hoses on backwards. My 05 had this issue from an incorrect sized replacement hose.

For the coolant, check in the valley between the heads. The back of the water pump housing has an o-ring that is prone to leaking if not replaced during the timing...
Congrats on the new ride. The bouncing after you stop definitely looks like blown shocks. Or at least, severely underrated.
I have seen reports of Ironman 4x4 systems having some issues in quality, but don't know anyone with them personally.

I am currently running P rated tires. I've had 1 puncture during normal driving, but that was last year on a tire that was wearing uneven towards the inside (Need new springs/struts). I plugged it and it has been fine. That section of the tire was almost bald so it went to the rear door...
Between those 2, I would choose the Cooper AT3.
However, I have put the Toyo Open Country AT2 on everything with 4WD in my family. I've had a set on my 05 for 50k miles and plan to get the new Toyo Open Country AT3 as their replacements.
I only run 265/70R17 so I can't speak to larger sizes...

Glad that you found a fix. Mine had the leaking water pump o-ring, but the small hose to the overflow tank was also clogged. So when it did run low, it never pulled replacement coolant. The level would just stay the same. Once I cleared the hose, it started drinking the tank in about a week...
The Dayco brand gaskets on RockAuto are layered paper/fiber gaskets. They dissolve over time and leave behind residue that must be scraped off so a proper gasket will seal.
Aisin and other quality pumps should have had a layered metal gasket.
Water pump failures are usually either the gasket or the bearing in my experience. Both can be helped by purchasing quality units. The Dayco model I used didn't have a bearing fail, but the paper gasket barely lasted to the next timing service. I used Aisin parts this last time from RockAuto...
