I'm with the OP on skinny tires. I think some 285/80R17s or 275/85R17s would be great on my F150. Tried the wide 315s and I'm not a fan, settled for some 285/75R17s that I like, just wish they were a little taller.
I ended up getting the Cooper AT3 XLTs and so far like them. Very quiet on the road compared to the KO2s I had before, and seem a little more aggressive than the pictures show. Haven't had them off the beaten path yet though, so can't comment there.
I'm not familiar with the 2015+ trucks but my 2013 fit 35s fine with Bilsteins at 2 inches up front.

Yes it will be a slide in. I plan on insulating with foam panels where I can and will have the canvas for the pop up insulated. I have considered a wood frame instead of steel since that would be a lot less thermally conductive but I have more experience with steel.
