Most of what I do is stainless steel of which I've used thousands of nylocs and can't recall any coming loose even the ones I've re-used 2-3 times. In some places I'll use blue Loctite with nylocs
To keep the stainless nylocs from galling I use a product called Tef-Gel

We run a 600w and a 3000w in an attempt to have the inverters running in the 20% to 60% range. The other factor is standby power the 600W uses 0.5A while the 3000w is around 4A. We leave the 600w on 80% of the time.
Haven't run the number but you'll need to look at which solar controllers works. Our Panasonic panels are rated at 70VDC (I've seen it higher). Two 2 -70V panels in parallel will need a controller with a input voltage greater than 150V. A series/parallel setup with 9 panels may not work.

Thank you. I'm trying to figure out how small we can go. In winter our gear multiples 3 fold so storage gets really tight. I was wondering if it was possible to put an insulated tank between the rails. That is where our tanks are with 2" XPS insulation. This has worked down to -15F.
We take the water filter off to let it dry between trips so nothing grows in it. Growth will start in a tank if all the water doesn't drain out of it.
