It depends on how long you are camping, and how many bodies you are taking with you. I say bodies as I have two dogs and they typically go through about 1.5 gallons per day. For people and cookinig/clean up, we figure on 3-4 gallons per day. So, without showering, I typically take 5 gallons...

I recommend 2 x 6v golf cart batteries wired in series. Best bang for the buck, and life. No downside except weight, but what capacity you'll have! Costco is where I get mine. Tons of us solar folks use that set up. My favorite, at least, but tons of different ways to make it work...

You definitely need a charge controller between the battery and solar panel.
