All I can say is everyone with a Coverlay I’ve encountered has been very pleased with it. I’d have at least given it 5 minutes to test fit before giving up...
To each his own but I find the air suspension exceedingly comfortable. My wife gets car sick very easily and loves it. Not to mention you kill one of the best off road features
The hood latches on either side are quite finicky. Try adjusting and lubing them. If it continues see if either or both should be replaced. I still have to slam the hell out of mine and had it pop loose in a similar fashion you mention. Make sure you’re really closing it hard too
Just run them on the 8” wheel. I’ve seen several with it and have not heard of any issues. Some people use steel wheels from 90’s Camaros or aftermarket steelies for a 7” option. I’d steer clear of any non-LR alloys though there some BMW wheels that will fit

Buying a D2 is not a bad idea if you like to tinker and turn wrenches. A $500 D2 will more than likely be a bad idea. They can be enjoyable vehicles for the right person (I’ve owned two) but one at that price will be a nightmare IMO. Given they’re so cheap, find a nice, well maintained example...
I would add that if it falls under one of the above valve block scenarios and a rebuild does not fix it, do not rule out the valve block. The block can be leaking internally and back to the compressor. This happened on mine and I’ve read of several similar accounts
