We use stainless steel plates from Wealers. They pack small and are really easy to clean. If water is that big of a concern they can just be wiped off with a damp rag.
Dishes can be washed with *very* little water if you're careful about it - I learned this from backpacking, where every drop...
It boggles the mind that there are not direct-DC charging options for DC appliances like laptops...I've got an inverter but I'd rather not take the loss if I can avoid it. The stupid laptops are the *only* things I can't find DC cords for, and thus, the only reason I need the inverter at all...

What do you expect the trailer to weigh? Mine is 1800# dry and we haven't had any trouble with it shifting in use but the jockey wheel sure is handy for moving it around in the garage or at the campsite. The direction that you can pull\back the trailer into the site isn't always the optimal...

Either way though I think I'm glad for the wheel adapters. The wheels that came with the trailer were 8.5 inch and the TRD wheels are only 7 inch so without the adapters the fenders would have overhung...

Clearly you have 2 different batteries there, which is not ideal, but are they actually different chemistries? You mention that only the "yellow top" is AGM. It is best for any dual battery setup to use 2 of the *exact* same battery. If you are using batteries with different chemistries...
I run 275/75/17 KO2s on my trailer to match the taco (also on TRD wheels all around). As mentioned, having the extra spares really helps to relieve some anxiety. I've been happy with the way it performs, on-highway and on rough sections of what can only be called "roads"...

This is why it's a good idea to also switch the control circuit. The winch won't run without power to the control circuit.
If you don't have the tools\wire handy and don't have another local option, check out powerwerx, they will make any custom cable. An 8 inch 2/0 with terminals on both ends...

I have mine mounted on a bracket on top of the battery. The bracket mounts to the "extra" threads left over on top of the battery tie-down bolts, with some spacer bolts in between.
I've got a circuit breaker on my ComeUp. Don't be thrown off by the "400A" rating of the winch. It is almost never going to actually draw that amount and if it does it is likely to only be momentary. Look at the rated characteristics of the breaker you may use. Most of them will handle well over...
