For 2 people I think your choice of a high top van is perfect. I am really looking forward to your reports and I commend you on starting a company and following through with your dream...especially as that dream gets more kids into the outdoors! This is something we desperately need in the USA...
As others have said...stuff & cold falls out of a side door.
Plus I really think I can get way more stuff in a top loader as I can pack it in :)
Lastly if you are worried about a loss of counter space then remember you CAN use the top of the fridge for space other than when you need to reach in.
Oh the fantasies of catching someone doing something like this with noooooone else around.
