On Saturday we drove up to see the van (at Colorado Camper Van) and plan the next phase. We spent about 2 hours with Derek (and even got to meet his new baby!) drawing lines on the floor in sharpie. Here's a brief summary of the interior we have planned, starting at the rear and working forward:
- Rear storage area - all interior furnature will start 18" from the back doors
- Dinette or U shaped seating area with table, convertible to bed
- 36" high cabinets along the driver's side with sink and space for stove on top
- Full-height closet and slide-out pantry right behind the driver's seat
Eventually we're planning to add a cabinet on the passenger side right behind the door opening and in front of the dinette that will house a refrigerator. The fridge will slide out into the door opening so that it will be accessible from inside or outside the van.
Some pics:

Looking out the front of the van. Derek is building a kid's bed that will be right over the driver/passenger seats, and accessed by a removable ladder. There will also be removable netting that should prevent any nasty falls. This feature is what really sold us on CCV. This means we will have dedicated beds for all three of us and won't have to convert seating areas to beds every night*

The poptop without the canvas installed. Derek has moved the motors so that they move up and down as part of the top. Apparently that gets you a wider bed.

Passenger seat removed. We're also planning to install a third seat between and slightly behind the driver/passenger seats. We were hoping that we'd still be able to access the rear of the van from the inside, but the center seat takes up pretty much all of the space, and getting to the back will be possible but will involve some climbing (and may not be possible at all with a child seat installed.) We were hoping that the center and passenger seats would swivel, but there's not enough room for that. We think we will be able to make the center seat swivel by sliding the driver and passenger seats all the way forward so that they clear the front of the center seat. Probably something we won't do unless it's raining and we're in for an extended period inside the van.

Below the poptop out the back of the van.
*Yes, our other car is a Prius. Yes, it made it up the road to Derek's house. No, it is not lifted, locked, etc.
