I have a 2011 VW sportwagen TDI. 40mpg without trying. I put more miles on it than my other 7 cars combined.

Passat TDI would be my choice now.

You didn't say what type of car you're looking into(sedan, suv, pickup????)
You can pick up any of the new Mazdas with skyactive technology, the new mazda 3 gets 40mpg hwy http://www.autoblog.com/2013/07/11/2014-mazda3-2-0l-hatchback-officially-rated-at-40-mpg-highway/ , the mazda 6 sedan and the cx5 suv are not too far behind in the mpgs, and mazdas are very fun cars to drive.
All of them are well below 30k

Keep driving the Tundra and/or Dicso - 30k can buy a lot of gas.

Evoque gets 23 to 28 mpg. VW TDI is good. I have a Jetta TDI, 500 miles per tank. 14 gallons fills it up.

I was going to try and help with a reply but the US seems to get starved of the vehicles that give really good mpg , in the UK a subaru is considered to be heavy on fuel JMHO

This is very true...I've owned two Outbacks and currently own a Legacy. Better MPG than my Disco? Sure. But incredibly overrated MPG in the grand scheme. Usually between 20-25 mpg consistently (flat 4 no turbo) in all of them...although I did get 35 in my last road trip (all highways).

New VW Passat TDI would be a great choice. My hunting buddy just bought one as he and his son competes in ASA archery competitions all over the region and they have really enjoyed it.
