Don't some of the more "hardcore" rock crawlers use a cutting-board like material for their skid plates b/c it's lightweight and fairly strong? Would something like that work in this application?
I like the look of that kennel/koop flooring. I think it would make a fine on board shower floor too if you made it removable from the roof rack. Then again, maybe showering on the roof is a good idea anyway, you get a carwash at the same time.
