My favorite place to dump grey water is on the verges of gravel roads where nothing normally grows, but not on the road itself.
Alternatively, dig a hole, preferably in a sandy location where it will soak away.
I avoid placing it on native vegetation.

Yes, anything edible that you dump on the ground could attract critters. Bees and wasps are drawn to water if you are in a dry climate.
I figure that you would have to be young and have no mobility or disability issues in order to utilize that space for sleeping. For me, I would think that 900mm would be the minimum height I could work with.If the double bed is in that space above the cab, you must be like Wile E Coyote after been flattened by a road roller
