Lookin sweet! Really liking all the details! Great job
If you want to know what your battery capacity is this is THE way to go: http://www.bogartengineering.com/products/TriMetric
And here is a wealth of info you can read until the accounting dept frees up your funds: http://handybobsolar.wordpress.com/the-rv-battery-charging-puzzle-2/
I want an ammeter to keep an eye on the battery consumption. I'm looking at this one from Amazon but I don't have a warm & fuzzy as whether it's what I need.

Can anyone give me some input?
Do you really want an ammeter? They only read when current is flowing, and the amps indicated are only consumption - has nothing to do with remaining capacity (which is what I assume you are wanting to know.) Ammeters are good for finding shorts and determining the efficiency of different devices.
A voltmeter will tell you the state of the battery, whether or not current is flowing. The higher the voltage, the more charge (remaining power) the battery has.
Matt, your build looks great. Wish I had 1/2 your skills!
