Not mentioned here is to get snow tires for off-road use. They aren't ideal but they have a bit more aggressive tread that may be nice at times. The other benefit is, of course, you will be unstoppable in snow with a Subie and snow tires.
M+S tires are pretty decent, but again, they're a light-weight tire and can't take a lot of sidewall abuse. And the tire compound is way too soft to use them in warm weather.
I had Yokohama geolandar AT's on my jeep at one time. Pretty good off-road, great on road. If you get them make sure you rotate them regularly. I did not rotate mine and they wore poorly. Otherwise pretty good for the weight and price.
General grabber at2's are just plain awesome. Heavy, a bit noisy, but awesome.
