I am finding, letting it warm up slowly on a low to med heat distributes the heat better in the pan. High heat tends to form a hot spot in the middle. If the food does not generate its own moisture while cooking, add moisture in the form of water or oil.
 
This is helpful information. I've been having trouble adjusting to using the skottle, both with the temp settings and the "active" shuffling things off/on the hotspot. Some things work okay (mostly meat), but I'm fighting a lot of it. I really want it to work, but feel like I may end up replacing it with something more traditional. I'll give it a few more attempts before giving up on it.
How long do you let it warm up on high, before backing the heat down?


I find that the skottle cooks best when on an even level surface. It seem that if it is on uneven ground the flame will go to the highest spot underneath and seem like it is not heating correctly.

Good to know. If I can get the cooking method sorted, I'll probably modify the legs to add in some height and leveling ability. At 6'1", the skottle sits a bit low for my liking.

At 6'4" I hear you. If you come up with a good way to raise it let us all know. I find myself sitting next to it a lot for the same reasons. I'd love to gain a 4 or 5 inches.

If you need taller legs on the Skottle go to any metal supply store and ask for 1" x .060" round tube. The metal supply store should be able to cut the pipe to any length. Don't use electrical conduit, it bends too easily.

That almost seems like cheating. I do love simple solutions.

I guess I will though out the hydraulic lift system I was doodling on.

Pro-tip: A chainmail pot scrubber works great for cleaning the Skottle. It removes particles of food that are sticking up proud of the surface, while not grinding away at the seasoning the way a Scotchbrite pad will. Also, the Blue Ridge bag has plenty of room for:

-Propane tank
-Fine-mesh 4" strainer for cleaning fryer oil (available at any Asian store)
-Long-handled spatula and/or tongs

Don't have a picture at the moment but this is the breakfast I made on the skottle last weekend camping. Dice 2 to 3 potatoes into cubes and let them soak in water for 5 to 10 minutes to remove some of the starch. Drain and pat dry best possible. Heat your skottle with a fair bit of veg oil and add potatoes and let them fry moving them occasionally. While potatoes are frying dice bell peppers, onion, mushroom, tomatoes or whatever else you like for veggies. For meat i like shaved ham chopped up as its not as greassy as bacon or sausage. Put veggies in a bowl along with meat of your choice and add an egg for everyone eating breakfast. Wisk everything together and add seasoning of your choice.... cracked pepper and seasoning salt are my usual choices. I also like to add a little milk and a pinch of sugar as I find it helps keep the eggs fluffy. Once your potatoes are well browned add the egg mixture and mix everything. You will have to keep mixing to keep the egg from burning to the bottom of the skottle. Right before serving add shreded cheese. And there you have it... Pan Scrambler! You can also use a bag of store bought frozen hash browns to save on prep work and have your egg,veggie,meat mix pre made ready to go in a zip lock bag.
 
I was hoping for a recipe book as a stocking stuffer ;) The chainlink scrubber is a great idea now all I need to do is locate one !!!
