To my knowledge, I think Goodyear is the only mfg to offer this size. The only problem with that is if you damage a tire, it may be difficult to find a replacement. Way more options in the 295/70/18 size but it is taller and wider.
The 275/70/18 is a very popular size as it is the factory size for each of the big three 3/4 and 1-ton trucks so just about every tire mfg offers it. The 285/70/18 is just a little bigger but pretty limited selection.

PS pumps started leaving the f150 in 2011. My 2012 f150 had electric power steering. Never any squealing, even down to -25°F. No issues with it other than I felt it was a little too quick which made the truck feel twitchy. Only the 6.2L v8’s had hydraulic PS in the 2011-14 F150’s.

Maybe find a super duty with the optional 4.30 gears and see how that feels with the 37's. If you still need more, I'd re-gear to 4.88's, maybe even 5.13's, depending on how much freeway travel you plan to do.
