We have two of these that run fill time when air quality is bad.

I run the 285/75r18 Toyo AT as its the highest load index LT available.
Quiet, smooth, and long wearing. Its also the most round and easiest to balance tire Ive ever ran.
They may mount "fine", but there is good reason why the tire MFG specifies wheel widths.
Especially for a proper truck with a proper payload rating, that are designed to haul weight reliably/safely.
Running a tire on a wheel outside the specified width puts far more strain on the sidewall...
It happens. A high GVW gasser F250 will have a decent payload rating.
Even my "old" 2011 F250 6.2 gasser with a 9900lb GVWR had near 3500lbs of payload when stock. (y)
Ive fitted our flatbed very close. The cross-body box has less than an inch of clearance from the back of the cab.
This cab however, tips forward at the belt line so the window is more like 1-3/4" to 2" from the box.
The cabover, by design, is tight at the rack around 1-1/2"

Correct tire pressure is based primarily upon heat management.
Variables that contribute are road speed, load, and pressure. Running a lower pressure will require either slower speed or lesser load, or a combination of the two.
Keep tires from overheating and they will last

They are heavy trucks, designed to haul heavy, with simple suspensions and stiff shocks.
So yes, in anything near stock form, the ride quality is pretty bad.
My work service truck is a Chevy. Its like driving a sofa compared to my personal Superduty.
There is no one-size-fits-all, but what you have is well too tight.
What I suggest is that you load the camper with at least 4" of clearance between top of cab and underside of cabover, and flex the truck out to see what's what.
Until then you will not know how tight of tolerances you can get...

Just be careful about running TOO much tire for your given weight.
Big tires with a high load index, running at lower PSIs for the given weight can/will introduce handling/ride issues at speed that cannot be corrected by dampening.
