Welcome, we have a MB917AF OM366. Mercedes trucks make great overland platforms. The 1928AF will be quite stiff, you will probably have to soften the suspension, but a good base vehicle. Have you made the purchase or are you looking?
On another point, I think the hallway shower is a bad idea. A shower or shower wet room does not take much space. All high end overland trucks have them. they are also a great place to hang and dry wet gear after a hike.

The 2520 Watt hrs would be 210 Amp hrs. In perfect conditions I have seen 40Amps off the panels, but only at mid day. morning and evening those numbers drop drastically. Don't base your projected power on 12 hrs of the peak output.

Well my real world experience after 5 years on the road with 630 Watts of panels is you can expect an average of 4X the rated panels max output in Watt hours. for us that is 2520 Watt hours. Using your math and science we should be getting 70% X 12hrs X630W = 5292 Watt hours. More than double...
Where are you getting your numbers? You are way over estimating your real world panel output, I would say by a factor of three.
Comparing it to an Earthroamer is a bit of a stretch. The biggest feature of Earthroamers is the integrated cab-cabin. You are building a flatbed camper.
