Weight over rear axle is +/- 6500 lbs. The relatively empty truck is 700 lbs heavier on the drivers side vs the passenger side. I'd estimate the rear to weigh 5800 lbs if the cabinets and house batteries were removed. My box is only 88"...

Experiment with different pressures. I can’t give you a number there are too many variables. Offhand I’d say the lowest pressure that’ll give you the ride height you want, and ride you want. Less is more in my experience.

Follow the lines under the floor back to the junction at the back of the cab. Replace those lines with a small loop of heater hose. In some cases they could just be capped, but without studying your setup, connecting them together would be best.

Excellent. Economy seems about right. Sailing down the freeway, mostly 70 mph+, I averaged 16 mpg. I’m sure glad I’m not getting 10 mpg… or less.
In a winter snow storm I managed about 20 mpg. Slow starts, reduced top speed, slow and steady… the results were surprising. :D

8 lug nuts on long studs hold both wheels on. Get some 6 Ton jack stands, crack the lug nuts (loosen but not loose), jack it up with the bottle jack close to one side, put the axle stand on that side, and remove the wheel.
My experience has been that it doesn’t get more reliable than an E350, 7.3 PSD, Ambo... if the starting batteries fail or aren’t enough, the “Sure Start” switch, turn the key and you’re back in business. They’ll go a million miles, and a friend drove a tow truck that had been pinned at 99,999...
Once you have it all perfected, there may be others who follow in your footsteps. There are certainly trade offs to a 5’6” interior height.
I understand the need, but it’ll have to wait till I’m retired, the 40 is built, and the kids are a bit older.

Disc Brakes make brakes more of an issue for conversions. Unless you’re replacing the whole axle with one that already has them.
