True, however you can get 2" without bump stop issues with stock UCAs.
Try cranking your stock t-bars ans see first how they respond. You will need new t-bars eventually anyways, they firm up the ride, but see how the stock will do for now for a temp fix
Good call on removing the air Dam, never understood why they needed to put that on any 4wd, some of the new full-size trucks have a HUGE one, costing almost a foot of ground clearance in the front.

Lots to offer here, I would think a week would me need to see a good chunk of what's here. The trails aren't anything crazy but enough to be fun in a stock-ish vehicle. Certainly lots of hiking, biking, fishing and hunting.

I don't think it would be an issue. I haven't put wine bottles in mine but I've used it to carry standard beer growlers (60 oz) without issue. I think wine bottles are only a little taller.

I would avoid going a cheap route just for the summer you will regret it later.
It's one thing keeping a stock sized tire for awhile but it's another thing entirely when the tires are a size smaller than they should be!
