I like pancakes!!!!! Chocolate Chip are my fav. In fact I just remembered I have a couple left over from breakfast yesterday morning...

I'm a sucker for waffles too!
 
From a non-US perspective:

Pancake mix is OK for camping, but at home it's homemade batter all the way. It takes something like three minutes to make, and what's the big rush anyway? We're so lucky that we've got friends who keep chickens, so we're making them with fresh non-factory eggs.

I make pancakes without any kind of rising agent. The eggs add a bit of fluff anyway. I think that is the most common way to make them in Norway.

Around here we're knee deep in blueberries every autumn, so we've got home made blueberry jam as well. The kids are usually prefer store bought strawberry jam, though, and sour cream.

I like maple suryp, which over here is somewhat exotic. Well-stocked shops have it, but in tiny little bottles and it costs a small fortune.

Do you use Lingonberries? Lingonberries and sour cream are wonderful on pancakes.

Can anyone suggest how to make large batches of pancakes and keep them warm... for such an occasion as an ExPo pancake breakfast sort of deal.

I do that at home all the time. Oven set to 200-250F, pancakes in a baking pan. You could put tin foil over top to help.

swedish pancakes or blintz are my favs made with buttermilk from scratch

dont like thick puffy style pancakes at all :(

pure maple syrup or lemon syrup and powder sugar
another favorite is brown sugar sprinkled with some maple syrup

That good taste , but hay to cook them in camp ?
I have trouble at home create smooth equal round thin as paper , but cook in camp with .out stable temperature ....you mast sheer your secret:chef:

swedish are not as tough as crepes in my book :) and man that is making me hungry
to me swedish are a bit more moist and a touch thicker but not much

the way I learned to make them is drop the batter in a circle and spread it out quickly
non stick coleman stove griddle and a ladle or large spoon back to spread the batter out if using a griddle
or the old drop in a circle and swirl the pan
I have some commercial non stick pans also along but prefer the griddle as I can do more and eat with the family then

for mixing I use one of those tupperware things ? they look like a large cup with a lid on it and a grid thing you put in to mix stuff up I think they are for gravy or something ?

love these things for camping and even home use but they are handy cause you can pour out of them easy also
plus handy for mixing drinks etc...

or mix it at home in the blender and bring along since it lasts a few days :)

Me i ask you hay heavy thick your pan , you did not use cast iron at all ?
The reason why i ask , cast iron have chance keep stable temperature , other way you mast work hard and paid attention watch every second :Wow1:, so blintz do not became to dry or over crispy .

Full plate of Good blintz , honey , strong black tea , nice sunset , fire in the back hay priceless is that :chef:

Yup, standard Saturday or Sunday morning breakfast growing up, that or waffles.
I've been making them from scratch for 30 years or so.
Buttermilk
Some combination of unbleached white, brown rice, spelt, oat, whole wheat flour. (I never measure, just add some of each that I have on hand.
1 or 2 eggs, depending on how many I'm making
Baking powder.
I usually add one of, blueberries, apples, banana, pecans, choc chips. Occasionally use pears.
Every now and then I make yeasted buckwheat pancakes I let rise over night.
Maple syrup only
Best with homemade butter, but I can't find nonhomogenized milk here.

It takes no time to make them.
If I turn on the griddle, or put the cast iron on the stove, by time they are hot enough to cook on the mix is ready. Actually I usually have a couple minutes to spare.

For camping I just mix the dry ingredients at home.

I've been using those for years for camp pancakes. No eggs needed, just add water and shake. They also seem pretty tolerant of outdoor cooking.

I don't end up making from scratch very often, but sometimes there is the addition of cinnamon and ground pecans.

I have used that before.
Had a small bottle and the big one.
Works pretty good.

I am going to try the Kodiak this weekend, I may try it in a shake and pour bottle to simulate how I would do it out camping to see how it works that way.

Yup. Great for camping. I mentioned those earlier on in this thread.
