Do you like Pancakes?

Not exactly pancakes but sorta related :): Growing up my Mom would take left over plain polenta while still hot and pour into a greased bread loaf pan. Next morning, after sitting in the fridge all night, she would un-mold the polenta and slice into 1/2"-3/4" thick slabs. Into a pan of melted butter until nicely browned...flip...repeat. Serve hot with maple syrup.

This would be a great one to take along camping; on my list of "to tries" for this spring's trips. Could have the polenta already made ahead of time...

You can also do a very similar thing with leftover corn bread. Cut it into chunky slabs, fry in butter until crisp and a little golden brown on the outside, add maple syrup and sprinkle some crumbled bacon over the top and you're good to go. You might want to try adding the crumbled bacon to the polenta version.

Not the same as pancakes though. We've tried many of the prepared varieties of mix over the years, and while they are convenient for camp cooking, and many of them make acceptable pancakes, we've found that a lot of them are just too sweet for our tastes. So, we've gone back to homemade. We use Alton Brown's recipe found on FoodTV.com. We mix a big batch of the dry ingredients at home. Then you measure that out based on how much you want to make, add the liquid ingredients, and away you go. A little more work, but well worth the effort.

Been cooking the Kodiaks too in my camping 8" Lodge skillet.
One cup of the mix and on cup of water makes for 3 8" pancakes.
Of course I have to cook them one at a time, but 3 Kodiaks smothered in real Canadian maple syrup is great.

I've been using those for years for camp pancakes. No eggs needed, just add water and shake. They also seem pretty tolerant of outdoor cooking.

I don't end up making from scratch very often, but sometimes there is the addition of cinnamon and ground pecans.
I tried this product last weekend at home to test it out. It was quick and easy but I didn't like the flavor, I think it had a lot of artificial vanilla extract taste to it.

I use a just add water mix with my trusty cast iron. Usually cooked right after the bacon to get the pan seasoned right. Favorite way is over an open campfire with some strategic rocks to support the pan.

I also like to throw in some berries when even possible. Fresh Mountain Huckleberry beats blueberries any day of the week.

add a stick in there and you have bacon pancakes on a stick!!

or apple cinnamon bacon pancakes is really where its at.. thats what i had last time out (dried apples and some cinnamon in the shake and pour container.)

edit, you also need a bucket of syrup to dunk them in :)

Maybe a little off topic, but I love potato pancakes with a little butter. Making my mouth water as I speak....

Which kind of potato pancake?
The kind made out of leftover mashed taters, or the kind made with shredded taters.

I like either kind, served with apple sauce.

I will try this at the first possible chance I get, ie camping without my SO who would absolutely forbid such depravity.
It would also have to be a non-travel day, after a plate of those with a cup of brandy laced coffee I'd need to crawl back in bed.

The X wife and I use to put peanut butter, apple sauce, and brown sugar on both waffles and pancakes.

It is really good on pancakes when camping.

Gosh, I have not tried it that way in ages.
I know what I am picking up next trip to the grocery store.

If you can find it try apple butter, very old fashioned but great stuff.

Depends on what's on hand. I prefer shredded potatos, mixed with egg(s), a little flour, onion, and a touch of salt, sauted in bacon grease (sounds better than fried) until browned. I've had them for years that way.
I second the applesauce notion. They're not the same without it.

Guess what I just talked myself into eating tomorrow night?
