The tailgate itself is fine strength wise. I stand on mine all the time. The weak point is where the tailgate chain attaches to the sheet metal handle for the locking pin and where the handle attaches to the pin itself.
Clever tailgate fix. I still am not a fan of the mil pins for keeping the tailgate closed because mine tended to walk out while flapping in the wind at freeway speeds. Be careful standing on that tailgate though, its just sheet metal holding all the weight.

Seems like that spare location would get pretty frustrating. A swing out carrier or a side mount spare in front of the fender would be more practical since you would not have to move it to open the tailgate. Or put the trailer spare on the front of tow vehicle.
I also use tarps. They are much cheaper and can be used for other things. I recently upgraded from a canvas tarp to am 18 oz vinyl.
Seems like most of the awnings I see poster are horizontal or slope back towards the vehicle which seems like an issue in rain.

My guess is that the lids would be pretty heavy because the spans are longer and would require heavier materials.
I haven't looked, but I am sure you could buy an off the shelf tonneau style cover for a standard long bed truck and make it work
I still suggest using a hole in the channel. If they are too long, just twist them a bit. It is clean and no extra parts or hardware are needed. Or just weld the angled brackets to the frame/tongue extension.
You do want to try and keep that large link close to the spacers because you can...
