If you hook positive to positive and negative to negative (called parallel) you do not change the voltage only the capacity so 8x38Ah would give you one big 304Ah battery at 12v nominal. This is typically what you would want unless you were trying to run say a 24v system or something.
I largely agree with Randy that most 2m stuff is not about having an optimal setup its more about keeping something in the air. There are however exceptions.

Nicely done. Good score for tidy work. One change you should make is the fuse for the Positive should be as close to the bat as posible. It's also not a bad idea to also gorund the gound wire to the chasis near the radio. If you do the negetive fuse must be between the radio and the new ground.

It's a jeep thing that I don't understand. My 98 XJ will not pop start even with a fresh bat. The computer must not give it any fuel cause it will just turn over and over down the hill but will not start. My 87 was not a problem so it's a penta star thing too.
Also in Auz unless you are some kind of rancher you are much more likely to encounter a "Roo" on the bush roads than a "bull", thus the big bumper guards are commonly called Roo guards. It's no wonder so much cool stuff comes from such a small population country.
