As far as hauling fuel, have you considered JCR bumpers instead of AEV? Will save you around $500 and I personally think they look better (not that looks really matter of course ;) ) You will lose the water...
I agree with the other posters. AEV is nice but not necessary. I built a steel front bumper for my Jeep under $100 and its already survived being backed into by an F150 with no damage. Sure its ugly but it gets the job done. No welding either.

I hate to post off topic but what kind of cargo cover is that over your rear deck? It looks like a Spiderwebshade but they don't make anything like that, that I know of.

Ive never heard of anyone bending a frame with an impact to frame mounted sliders. Frames are probably stronger on a JK than on a CJ due to the shear weight of a JK and better crash test ratings and government regulations.
Looking at the pic of the side profile, it looks like you could run a Rugged Ridge or similar light bar with lights on it and not protrude higher than the top of the J30. That would be a pretty cool look.
Looks great! I'd love a 4 door with the J30 top. I started to do the rear bumper tank conversion but have yet to buy the pump I need. I did find what I think is a perfect fill cap though. I bought a 2" PVC "knock-out cap" for a couple of dollars and drilled a 2" hole in the top of the bumper...
Cool vid. I enjoyed how it was filmed/edited. Reminded me of a Tarantino-esque style of film for some reason. 70's cool. Loved the music too, it fit perfectly. With that said, I want to see more of your camper/Jeep!!
You could always rig up a hose to run from the heater vent to the upstairs. Just like this jacket from ACE only longer so it reaches up top.

To be honest I do not have any personal experience with it. I did talk to the guys at Genesis last year at Jeep Beach and it seems like a very well put together approach. They claim it to be the easiest to install and the most complete system available here...
